Traditional Pumpkin Pie

Fall Compote

Fall's first signs always begin with beautiful varieties of pumpkins and apples. Being two of my favorite fall ingredients I have the best time getting creative in the kitchen with them both!

 

Thanksgiving Traditional Pumpkin Pie


1 pre-made or homemade Flaky pie crust

3 eggs

1 16 ounce can pumpkin puree

1 13 ounce can evaporated milk (Carnation)

1 Tablespoon Brandy, good quality

1 Tablespoon Molasses

2/3 cup firmly packed light brown sugar

1/2 teaspoon cinnamon

1/4 teaspoon ginger

1/4 teaspoon nutmeg, fresh

1/4 teaspoon cloves


Pre-heat oven to 450 degrees F. Thaw pastry as package directs or make your own delicious pastry. If using store bought, I prefer Trader Joe's. (It does require a re-rolling of the dough but why not!? You will have extra to make a pasty design for your crust or pie. Place in 9 inch pie dish or pan and crimp sides. DO NOT BAKE CRUST.

Mix all filling ingredients in large mixing bowl using wire whisk and pour into pie shell. Bake for 10 minutes, reduce temperature to 325 degrees F. and bake for 45-50 minutes longer until crust is lightly browned and filling is set ( a silver knife inserted into center should come out clean). Cool to room temperature before serving. Serve with a dollop of whipping cream. Also great cold our of the refridgerator. I have even been known to have some for breakfast!


 


Fall Compote

I use Nature's Eats brand from Beerne, Texas, for the Berry Fruit Mix (Golden raisins, Cherry cranberries, dried Cranberries, Blueberry Cranberries and raisins. This is a local product and the best I have had yet!

5 granny smith apples, peeled, cored and sliced

1 cup Nature Eats Berry Fruit Mix

2/3 cup fresh blueberries

1 lemon, sliced in half

1 can fruit cocktail, drained, 1/2 cup juice reserved

1 jigger Fireball Cinnamon Whiskey


In microwave proof container layer 1/3 apples, 1/3 fruit cocktail, 1/3 cup Nature's Eats Berry fruit mix, 1/2 Blueberries sprinkled on top. Squeeze half of lemon on top of apples and fruit. Continue to layer ending with blueberries. Squeeze over fruit remaining half of lemon. Add 1/3 cup reserved cocktail juice. Microwave on high for 3 minutes until soft. Add cinnamon whiskey and microwave for 3 minutes more. Let set overnight in refridgerator and compote takes on a delishous crustless apple pie flavor!

Serve warm alone or with Vanilla Bean Ice Cream.
